Goat cheese eggplant salad

Ingredients
1 cup chickpeas, cooked
7 oz goat cheese
1 sweet red pepper
½ cup fresh parsley
4 medium eggplants
1 red onion
2 tablespoon sesame seeds oil
½ cup cherry tomatoes
1 teaspoon lemon juice
1 tablespoon fresh basil
1 tablespoon flax meal
1 teaspoon butter
1 teaspoon minced garlic
Directions
Place the cooked chickpeas in the big mixing bowl.
Remove the seeds from the sweet pepper, and chop it.
Chop the fresh parsley and eggplants.
Then put the butter and the minced garlic in the pan and preheat it. Stir the mixture.
Toss the chopped eggplants in the pan and cook the vegetables for 15 minutes or till they cooked.
After this, add the cooked eggplants in the chickpea mixture.
Sprinkle it with the chopped fresh parsley and sweet pepper.
Cut the tomatoes and combine them with the salad mixture.
Then add flax meal, lemon juice, and sesame seeds oil.
Peel the onion and slice it. Insert the sliced onion to the salad mixture.
Mix up the salad carefully and crumble it with the goat cheese.
Serve the dish immediately.
